  • Urad dal
  • Ginger
  • Cashews
  • Grated coconut
  • 1/4 cup milk
  • Cumin powder
  • Sweet tamarind sauce
  • Pomegranate seeds

  • Asafoetida

  • Yogurt

Preparation

Matar Paratha Recipe

Ingredients 

  • Green peas 
  • Olive oil
  • Cumin seeds 
  • Asafoetida
  • Ginger, grated
  • Turmeric powder
  • Red pepper powder
  • Ground coriander

  • Gram flour 
  • Whole grain flour 
  • Salt
  • Oil 

Preparation

  • Heat a griddle pan (Tawa) over medium heat to make the Matar Paratha.
  • Make a spherical ball out of it. Roll this ball into a tiny disc about 3 inches across.
  • In the center of the rolled-out disc, place one tablespoon of the pea stuffing. Take care not to overfill the paratha.
  • Bring the dough edges together to seal the pea stuffing. Apply gentle pressure to the disc with your hand. Now lightly roll the stuffed paratha to the size of a chapatti or roti.

Besan Chilla Recipe

Besan Chilla is a savory crepe in the India style made with gram flour (besan), veggies, and spices. It’s a delicious low-calorie, vegan, and gluten-free Indian breakfast.

Ingredients

  • Gram flour (besan)
  • Rice flour 
  • Ginger paste
  • Turmeric powder
  • Asafoetida

  • Cumin powder

Ingredients for Chilla Filling:

  • Sweet corn
  • Cabbage, shredded
  • Chopped bell pepper
  • Chopped onion
  • Fresh coriander
  • Salt to taste
  • Chaat masala
  • Cumin powder
  • Red chili powder
  • Tomato ketchup
  • Cottage cheese
  • Cup grated cheese cup ghee 

Preparations

  • In a mixing bowl, combine vegetables, spices, and salt. Mix well. Taste and adjust seasoning as needed. The chilla filling is ready.
  • Combine the chilla batter and filling once they are finished. Whisk the batter and add extra water to achieve a smooth spoon-dropping consistency.
  • Over high heat, heat a heavy-bottomed, thick pan. A spoonful of ghee should be brushed on the pan.
  • Spread a spoon full of chilla batter on the skillet like a pancake. It’s a little thick and irregular. Drizzle a teaspoon of ghee over the chilla, cover, and simmer for 1 – 2 minutes over medium heat.
  • Remove the lid, flip the chilla, and cook on the other side for 10 – 20 seconds.

Sabudana Khichdi Recipe

Sabudana, also known as sago, is a starch derived from the soft core of tapioca and other tropical palms. It contains a lot of carbs. Tapioca pearls are famous in tropical areas due to their capacity to keep one full and deliver quick energy.

Ingredients

  • Sabudana water
  • Ghee 
  • Black mustard seeds 
  • Curry leaves
  • Peanuts 
  • Finely chopped
  • Salt and black pepper to taste
  • Lemon juice
  • Pomegranate
  • Ingredients for green paste:
  • Coriander leaves
  • Mint leaves
  • Green chili, chopped
  • Ginger, chopped
  • Water

Preparations

  • Soak Sabudana for at least 5 – 6 hours or overnight.
  • Transfer the soaked Sabudana to a filter the next day. Rinse thoroughly with running water until all of the starch has been removed. Set aside for 15 to 20 minutes in a strainer.
  • 1 – 2 tablespoons of water are needed to make a smooth paste of coriander, mint, green chili, and ginger. 
  • Heat ghee in a heavy-bottomed wok or kadhai. Mix in the mustard seeds and curry leaves. When the seed begins to crack, add the peanut. Cook for 1 minute.
  • Add the diced potato, salt, and pepper to taste. Mix well. Cook, covered, over low heat until potatoes are tender.
  • Turn off the flame. Mix in the lemon juice, pomegranate, and chopped coriander. Stir everything together.
  • Serve Sabudana Khichdi hot with mint chutney.
